Ingredients:

Dough:

  • 5 eggs
  • 160 g plain flour
  • 100 g powdered sugar
  • 100 g granulated sugar
  • 1 baking-powder
  • 1 bag chai latte tea
  • 10 PL chai latte tea

Chai Latte Cream:

  • 2 bags chai latte tea
  • 400 ml milk
  • 1 Art vanilla paste
  • 3 PL sugar
  • 250 g butter
  • 1 Art cinnamon
  • 2 PL plain flour
  • black and green cardamom, cloves

Whipped cream:

  • 500 ml whipped cream
  • 2 Art vanilla paste
  • 1 PL chai latte powder (powder for preparing a chai latte drink)

To decorate:

  • Lotus spread
  • Speculatius cookies

Approach:

Dough:

  • Beat the egg whites with granulated sugar until stiff. Pour boiling water over the chai latte and let it cool for a while.
  • Beat the egg yolks with sugar, add chai latte tea spoonfuls.
  • Add the sifted remaining ingredients and finally the whipped egg whites.
  • Mix and bake in a cake form lined with baking paper, in an oven heated to 180°C for about 30 minutes.
  • Let the carcass cool and finally cut it into equal parts.

Chai Latte Cream:

  • Cream: mix 100 ml milk, plain flour, cinnamon well.
  • Boil the remaining milk, sugar, tea, vanilla paste, cardamom, and cloves. When the milk boils, we take out the tea bags, add the mixture in which we mixed the plain flour. Mix until thickened.
  • Mix the butter into the cooled cream and mix well.

Whipped cream:

  • Whip the whipped cream, add chai latte powder, vanilla paste.

Layering:

  • 1. Coat the body layer with Lotus spread and then cream. Cover with the 2nd body and grease with cream. We repeat the procedure until we have no corpora.
