That's exactly what this caramel apple cake is - the ideal dessert for a colder day, with a cup of coffee or as a sweet spot for family celebrations. The base of the cake is a soft and fluffy crust, which combines classic flour with almond flour. Almond flour not only adds depth of flavor to the cake, but also softness and lightness. Place the cooled caramelized apples in this fruit “nest” and cover everything with the last sheet of dough. Then spread the remaining caramel cream over the entire cake – on the sides and on top.
Finishing touches: almond flakes and fresh apples
The cake is ready, but the icing on the cake is… the almond flakes! We lightly fry them to make them crispy and fragrant, and sprinkle them on top of the cake. Finally, we decorate with thin slices of fresh apples, which will add juice and visual flair to the cake. If you want, you can drizzle them with lemon juice so they don't brown. This decoration is simple, but very effective.

Ingredients:
Dough:
- 5 eggs
- 1 baking-powder
- 60 g almond flour
- 100 g flour
- 4 g cinnamon 2 article
- 100 g Brown sugar
- 50 ml water
- 50 ml Oil
Caramel cream:
- 250 g butter
- g caramel salko
Mascarpone cream:
- 500 g mascarpone
- 250 ml whipped cream
- 50 g powdered sugar
- cinnamon to taste
Apples:
- 350 g apples
- 150 g sugar
- 50 ml water
- 20 g cornstarch 2 PL
- juice of 3 lemons
- 1 Art cinnamon
- 20 g almond flakes
Approach:
Dough:
- Separate the egg whites and yolks. Beat the egg whites with 50 g of brown sugar until stiff. Beat the egg yolks with the remaining 50 g of brown sugar until foamy. Add the oil to the egg yolks and then the water. Beat the mixture well and finally add the flour mixed with baking powder, almond flour and cinnamon and mix well. Finally, add the beaten egg whites.
- Bake in an oven preheated to 180°C for approximately 35 minutes. After baking, let cool and then cut into 3 equal slices.
Apples:
- Peel the apples and cut them into small cubes. Pour the sugar into a pan and let it melt over low heat. When the sugar turns into caramel, add the apples and mix well. Then add the juice of 3 lemons. In a smaller bowl, mix 1 tablespoon of cornstarch (cornstarch) with water and pour into the pan. Stir until the filling thickens, add 1 teaspoon of cinnamon and finally let the mixture cool completely.
Caramel cream:
- Beat the butter for about 15 minutes. Gradually add the caramel sauce.
Mascarpone cream:
- Whip the whipped cream until stiff. Whip the mascarpone with sugar and cinnamon and finally add the whipped cream.
Assembling the cake:
- Spread the bottom crust with a layer of caramel cream. Cover with the second layer and spread the mascarpone cinnamon cream on top. Make a higher edge of cream on the sides and layer the cooled apples in the middle. Cover with the third layer and press gently.
- Spread the remaining caramel cream over the entire cake, both on the sides and on top. For decoration, toast the almond flakes in a dry pan until golden brown and sprinkle them on top of the cake. Add fresh or dried apple slices, and decorate with cinnamon sticks or a little caramel sauce.
