Ingredients:

Dough:

  • 130 g sugar
  • 250 g butter
  • 400 g plain flour
  • 1 an egg
  • 1 Art baking powder
  • 1 Art vanilla paste
  • 2 Art cinnamon
  • pinch of salt
  • peel of ½ orange

Filling:

  • 2 PL sugar
  • 400 g blueberry
  • 150 g cranberries
  • 2 oranges
  • 1 Art cinnamon
  • the peel of one orange
  • juice of ½ lemon
  • star anise

Approach:

  • Preheat the oven to 200°C.
  • Mix sugar with cold butter, mix flour, baking powder, salt, vanilla paste, cinnamon, lemon peel.
  • Finally, add the egg and beat until all the ingredients are combined.
  • We wrap the dough in food film and let it rest for about half an hour.
  • Put the sugar in a pan, pour a little water and let the sugar melt.
  • Add washed fruit, lemon and orange peel, cinnamon, star anise.
  • Season and cook until a thick jam-like consistency is formed.
  • Roll out ⅔ of the dough and place it on a buttered form.
  • Make holes in the dough with a fork and pour the fruit filling on it.
  • We will make sprinkles from the remaining dough. We add flour until we get a loose dough.
  • Sprinkle the cake with breadcrumbs and bake in an oven heated to 200°C for about 20 minutes.
