Ingredients:

Dough:

  • 3 ks eggs
  • 50 g sugar
  • 200 g flour
  • ½ package baking-powder
  • 40 g black cocoa
  • 1 plain yogurt
  • 100 g butter

Raspberry filling:

  • 500 g frozen raspberries
  • 300 g sugar

Cream:

  • 250 g mascarpone
  • 250 ml whipped cream
  • 40 g powdered sugar
  • Trolli brain-shaped candies

Approach:

  • Beat the sugar with the butter, add the eggs and yogurt. Finally, add the flour mixed with baking powder and cocoa.
  • Place muffin cups in a muffin tin and fill approximately ¾ full with batter. Bake at 180°C for approximately 15 minutes. After baking, let cool.
  • Cook the raspberries with sugar and blend them. Make a hole in the cupcakes and fill with raspberry filling.
  • Whip the whipped cream until stiff. Mix the mascarpone with the sugar and add the whipped cream. Spread the mascarpone cream on the cupcakes and cover with raspberry icing. Finally, coat the Trulli brains in the raspberry icing and place on the cupcakes.
