Ingredients:

Dough:

  • 150 g butter
  • 200 g plain flour
  • 75 g honey
  • ½ package baking powder
  • 1 an egg
  • 100 g ground almonds
  • 1 Art vanilla paste

Honey cream:

  • 250 ml milk
  • 1 PL sugar
  • 2 PL corn starch
  • 1 yolk
  • 1 vanilla sugar
  • 1 Art vanilla paste
  • 100 g butter

Almond crust:

  • 100 g butter
  • 100 g sugar
  • 2 PL honey
  • 130 g almonds
  • powdered sugar for sprinkling

Approach:

Dough:

  • Beat butter with honey, add vanilla paste. Then egg and flour mixed with almond flour and baking powder. Mix in a food processor until the whole mixture comes together.
  • Then knead with your hands on a floured work surface. Wrap in food film and put in the fridge for 30 minutes.
  • Divide the cooled dough into smaller parts. On a floured surface, roll out and cut out shapes. Place the cut-out shapes on a baking sheet lined with baking paper. We leave half as it is and add the handle crust to the other half. Bake in an oven heated to 180°C for approximately 10 minutes.

Cream:

  • Divide the milk into two parts. Add sugar and vanilla sugar together with vanilla paste to the 1st part. Heat the milk slowly. Mix the yolk and cornstarch into the second part of the milk. Mix the whole mixture well so that there are no lumps. (I recommend a shaker)
  • Slowly pour the yolk mixture into the warm milk and stir constantly so that the cream does not burn. Mix until a thick mass is formed. Cover the finished cream with food film and let it cool. First at room temperature and then I recommend putting it in the refrigerator. I recommend preparing the day ahead.
  • The next day, remove the butter and cream from the refrigerator. Let it stand for a while at room temperature and then beat the butter. Gradually add the yolk cream to the butter. Cream and butter must be approximately the same temperature! Otherwise the cream will curdle...

Almond crust:

  • Heat butter, sugar and honey until caramel. When everything is combined, add the almonds and fry for a while. Let the almonds cool for a while and then place them on half of our cookies. Bake in an oven heated to 180°C for approximately 10 minutes.

Assembling the cookies:

  • Spread the cream on the honey cookies without almonds. Sprinkle with the remains of almond caramel (during baking, a so-called caramel with almonds will form around the cookies, which will flow outside the cookies. Do not throw away, but mix and then sprinkle on the cream).
  • Cover with a cookie with almonds and sprinkle with powdered sugar and serve!
