Carrot-ginger soup

Preparation time: 10 minutes
cooking time: 30 minutes
total time: 40 minutes

Ingredients:

  • 1 kg carrots
  • 20 g ginger
  • 1 onion
  • 2 tsp turmeric
  • 50 g butter
  • 1 PL olive oil
  • 1 dl white wine
  • 100 ml coconut milk
  • 1 ks whole cinnamon
  • ½ lemon
  • salt, black pepper

  • mixed nuts
  • bread
  • rosemary
  • Oil

Approach:

  • Peel the carrot, ginger and onion. Cut the carrot into smaller pieces, finely chop the ginger and onion.
  • Add oil and butter to the pot. Add onion, carrot and finally ginger. Fry for about 10 min. Add turmeric, salt, black pepper and mix well. Pour over the wine and let it cook until the wine evaporates.
  • Then cover with water, add cinnamon and cook until soft. Meanwhile, fry the nuts in a dry, hot pan. After roasting the nuts, pour oil into the pan and fry the diced bread to make croutons.
