Ingredients:

Dough:

  • 3 PL gingerbread syrup
  • 2 PL cocoa
  • 2 Art gingerbread spice
  • 5 PL water
  • 1 package baking powder
  • 1 package vanilla sugar
  • 50 ml molasses
  • 50 g brown sugar
  • 1 Art vanilla paste
  • 160 g plain flour
  • 5 eggs

Cinnamon-orange cream:

  • 4 Art cinnamon
  • 500 g mascarpone
  • 250 ml whipped cream
  • 3 PL gingerbread syrup
  • orange peel from ½ orange
  • orange juice from ½ orange

Cranberry filling:

  • 1 PL granulated sugar
  • 125 g cranberries
  • 150 ml orange juice
  • 2 star anise
  • 1 whole cinnamon
  • 3 cloves

To decorate:

  • gingerbread houses
  • gingerbread men
  • sugar cranberries
  • crushed honeydew
  • rosemary

Approach:

Dough:

  • Divide the eggs. Beat the egg whites until stiff with 50 g of brown sugar.
  • Beat the egg yolks with molasses, vanilla sugar and vanilla paste. Gradually pour water and syrup into the beaten egg yolks.
  • Mix the flour with cocoa, gingerbread spice, baking powder. Then add this mixture to the beaten egg yolks. Finally, add the beaten egg whites. We add the egg whites gradually and slowly so that we have a beautiful fluffy dough.
  • Divide the dough into 2 parts. Pour into a mold lined with baking paper and bake for approximately 35 minutes at 180°C.

  • Leave the center free, spread the cream around the edges and put the cranberry mixture in front of the edges. We add crushed to the center honey trees and cover with another sheet. Spread it with gingerbread syrup and then with cream. We create the edges again and add the remaining cranberries and crushed honeydew to the center. Cover with the last sheet. Cover the entire cake with the remaining cream. Place the gingerbread houses on the sides. Decorate with sugar cranberries, gingerbread men and rosemary. Allow to cool and serve with a cup of good coffee.
