Ingredients:

Dough:

  • 200 g butter
  • 350 g flour
  • 100 g powdered sugar
  • 1 Art vanilla paste
  • ½ package vanilla sugar
  • ½ package baking-powder
  • 1 an egg
  • 2 PL Kakao

Topping:

  • 200 g dark chocolate
  • 50-100 g chocolate shavings it depends on you

Cream:

  • 100 g whipped cream
  • 200 g White chocolate
  • 250 g mascarpone
  • 2 slices gelatin
  • cherry jam

Approach:

  • Beat the butter with powdered sugar. Then add vanilla sugar and vanilla paste.
  • Then add the egg and finally the flour mixed with baking powder and cocoa. Stir the mixture well so that all the ingredients are well combined.
  • Wrap in food film and let cool for about 30 minutes.
  • Roll out the dough on a floured surface. We cut out shapes from the dough. However, the half must have a hole in the middle. Bake the cookies in a preheated oven at 180°C for approximately 10 minutes.
  • After baking, let the cookies cool on a wire rack. Then dip the cookies with a hole in the middle into the melted chocolate. Place on a wire rack so that the excess chocolate drips down. Sprinkle with shavings and let it harden completely.

Cream:

  • A day ahead, we cut the white chocolate. Heat the whipped cream and pour it over the white chocolate. Stir until the chocolate is completely melted. Cover with cling film and leave to cool, preferably overnight. First at room temperature, then in the refrigerator.
  • The next day, whip the chocolate ganache. If you are satisfied with the mixture and it is not too sweet for you, you can easily use it as a cream. However, I decided that mascarpone would add freshness. Therefore, beat the mascarpone a little and gradually add the white chocolate ganache.
  • If the mixture is thin, thicken it with gelatin. Soak the gelatin slices in cold water for about 5 minutes. Then we put them in the pan. Add a little cream and stir the mixture over a low flame until the gelatin is completely melted. Set aside the mixture, add about 1 tablespoon of cream so that the mixture is not too hot and mix. Finally, pour the entire mixture to the cream and mix.
  • Spray the cream on the bottom piece of the cookie. Cover with a cookie with a hole and sprinkle cherry jam in the center of the hole. (I recommend heating the cherry jam a little, it is easier to work with. And I also recommend buying it without pieces of fruit).
