Fluffy cinnamon nests made from sourdough
Soft as a cloud, with a cinnamon scent that fills the whole house
I love recipes that feel like a hug. And these cinnamon nests are exactly that. Fragrant, soft, slightly sweet, with a strong taste of cinnamon and butter – perfect for a Sunday morning, a gift for mom or just for fun. Their twisted shape resembles small wreaths and their aroma is so appealing that the whole household will be waiting by the oven while they are baking. This recipe is one of my favorites precisely because it is simple, but the result looks like it came from a professional bakery. When I tried it for the first time, I knew it would become part of my sweet repertoire. And since many of my readers love simple but effective recipes, I knew I had to include these nests on the blog. So let's do it – I believe you will love them as much as I do.
My inspiration and why I chose this recipe
This recipe was inspired by classic cinnamon rolls, which are known all over the world. But I wanted something softer, more beautiful to look at, and most importantly, something that could be wrapped and given as a small gift of love. And nests seemed ideal to me. Their shape looks like a work of art – a twisted dough with a cinnamon filling, which forms delicate layers after baking. Moreover, this entire recipe is simple and does not require any special equipment. You can make do with classic kitchen utensils and a little patience. The main goal was to create a recipe that everyone can make – even those who have avoided yeast dough until now. And the result is worth it! These cinnamon nests are exceptional for their softness and aroma, but also because everyone can bake them.
How cinnamon nests were created – my journey to the perfect shape
First, I made a classic sourdough dough – fluffy, elastic and slightly sweet. After rolling it out, I brushed it with melted butter and then sprinkled it with cinnamon sugar, which is the basis of every good cinnamon roll. Then I rolled the dough and cut it lengthwise – that’s when the beautiful structure shows. Before baking, I lightly brushed them with a beaten egg to keep them soft and shiny. I love the moment I take them out of the oven – the smell of cinnamon, caramelized sugar and butter is simply irresistible. Everyone who tastes them will immediately fall in love with them. And that’s why I believe this recipe deserves a place among your favorites.
Tips and tricks that will turn your nests into irresistible pieces
The most important foundation is a well-risen dough. Give it time, peace and warmth – I prefer to let it rise in a bowl covered with a towel in a warm place for at least 1,5 hours. Don't rush it, because only a well-rested dough will give you that beautiful structure and softness. When rolling it out, be careful not to roll it out too thinly – the ideal thickness is about 0,5 cm. As for the filling – I use melted butter and cane sugar with good quality Ceylon cinnamon. If you want, you can also add a pinch of cardamom for a more interesting taste. . And one more trick: after baking, brush them with melted butter with a drop of vanilla extract – they will stay soft longer and will shine beautifully.
How to serve cinnamon nests and what to complement them with
These nests are delicious on their own, but if you want something special, serve them with homemade vanilla whipped cream, lightly sweetened cottage cheese or cream cheese. I like to serve them with a big mug of latte or chai. Their taste pairs perfectly with spicy and sweet drinks, especially in the colder months. If you’re baking them for a party, you can lightly dust them with powdered sugar or even drizzle them with vanilla icing. They also work great as part of a sweet brunch – serve them with fruit, yogurt and fresh juices. And if you want to make an impression, wrap each nest in a paper cup and give it as a small edible gift.
Gluten-free and vegan version of cinnamon rolls – yes, it's possible!
If you avoid gluten, you can adapt this recipe using gluten-free flour intended for sourdough - a mixture with xanthan gum or psyllium is ideal, which will give the dough elasticity. As for the vegan version, you can replace the butter with a good quality plant-based margarine and the milk with a plant-based drink (preferably soy or almond). The dough will rise beautifully even without eggs - just add a little more fat and work it well. The result will be slightly different, but still very tasty. You can make the filling with coconut oil, cane sugar and cinnamon. And if you want to brush the nests after baking, use plant-based milk or coconut butter - they will be beautifully shiny and supple.
How to turn nests into a dessert worthy of celebration
If you want to elevate your cinnamon nests to a festive dessert, add a simple cream frosting. Mix together cream cheese, a little powdered sugar, vanilla extract, a tablespoon of milk, and a little cinnamon. Pour the frosting over the slightly cooled nests and let it drip down the sides. The result will be even more tempting – sweet, creamy, and contrasting with the fragrant cinnamon. It's especially great for celebrations, brunch with friends, or as an edible gift in a beautiful box tied with a ribbon. And if you have kids, get them involved in decorating – the frosting is soft and can be topped with sprinkles, nuts, or dried fruit. You'll see that the whole family will love this dessert, and it might even become your new family tradition.
How to store cinnamon sticks to keep them soft for as long as possible
They taste best the day they are baked, but they are also delicious the next day – if you store them properly. The best way is to put them in a sealable container or food tin. This will keep them soft and fragrant. I don't recommend leaving them out on a plate because they will dry out quickly. If you know you won't eat them within two days, feel free to wrap them in foil and put them in the freezer. After defrosting, just heat them briefly in the oven – they will be as good as fresh again. I prefer to serve them slightly warm, when the aroma of butter and cinnamon is released. If you want to serve them to guests, you can prepare them the day before and just warm them slightly before serving. This way you can enjoy them even on busy days without having to stand in the kitchen for a long time.
Cinnamon wasp nests
Ingredients:
Dough:
- 550 g flour for Christmas
- 60 g brown sugar (4 PL)
- 100 g butter
- 2 eggs
- 1 yeast
- 300 ml milk
Filling:
- melted butter
- 8 g Ceylon cinnamon (4 items)
- 100 g brown sugar
- beaten egg
Topping:
- Philadelphia cheese
- powdered sugar to taste
- cinnamon
- possibly milk
Approach:
- Mix the flour with the sugar. Make a well in the middle. Pour in half the warm milk and crumble the yeast. Mix a little and let it rise for 15 minutes.
- Then mix. Add the eggs and the remaining milk. Finally, the butter cut into cubes. Let it mix for about 15 minutes. If the dough sticks to the bowl, add more flour until it does not stick. (The amount depends on the size of the eggs, etc.). Cover the prepared dough with a kitchen towel and let it rise for 1-1,5 hours.
- After the dough has risen, knead it on a work surface. Then roll it out and brush it with melted butter. Finally, sprinkle with sugar mixed with cinnamon. Roll it up and cut it using a string.
- Bake the chopped wasp nests either together in one container, where they will stick together. Or bake them on a baking sheet, further apart. Let them stand for about 10 minutes before baking to let them sour. Then brush with beaten egg and bake in an oven preheated to 180°C for about 15 - 20 minutes.
- After baking, spread with cream cheese. Mix Philadelphia cheese with sugar and cinnamon, or milk.
