Is it the case that you can't wait for spring? When everything starts to bloom and you know that spring is starting? The day is much more beautiful when you know that the sun and fresh spring air will wake you up in the morning...
I always look forward to spring, and especially to the fact that nature has many products that bloom and ripen in spring. Its variety and diversity gives me even more appetite for cooking.
But what will today's post be about? Today I prepared a very simple spring recipe for you, without which I can't even imagine spring. It's a very simple bear garlic spread that's mildly spicy from the garlic but not at all pungent... just amazing..
Where can I buy wild garlic?
You don't buy, but you COLLECT! Wild garlic grows everywhere in the forest, especially in humid environments. All around the streams. Once you're there, you'll smell it right away, it smells like garlic right there! It is a little more difficult to buy in Slovakia, but you will definitely find it...
Tips:
- it is best if you use butter at room temperature
- I also use freshly chopped wild garlic, but also mixed with a little olive oil (similar to pesto), the spread is greener after the pesto and has an even more intense taste of wild garlic
- the spread can be used in several ways, e.g. as a spread, filling for meat, you can spread it on sourdough and you have homemade bread with wild garlic... There's a lot, so don't hesitate and get started!
Bear's garlic spread
Ingredients:
- 50 g wild garlic
- 150 g Philadelphia cream cheese
- 100 g butter
- olive oil
- salt, ground black pepper, chili
- Parsley
- tomatoes
Approach:
- Put ⅔ of the wild garlic in a larger container and mix together with the olive oil to make a pesto.
- Finely chop ⅓ of the wild garlic.
- Mix the soft butter together with the fresh cheese
- Gradually add the bear garlic pesto, adding spoonfuls so that it is not too spicy.
- Season with salt, black pepper, chili.
- Finally, add finely chopped wild garlic and mix.
- Serve with bread or on toast. Garnish with tomato and parsley.
